The Todenham Butchery Masterclass

Field, Fork, and Knife
A Morning of Cotswold Craft
Step behind the counter of our immaculate, purpose-built butchery for an immersive morning of skill, provenance, and storytelling.
Designed for home cooks and food lovers alike, this 2.5-hour masterclass offers a rare, hands-on glimpse into the journey from our pasture to your plate.
Hosted by our expert master butchers in the heart of the Cotswolds, this is more than a lesson, it is a celebration of the artisan craft that defines Todenham Manor Farm, culminating in a well-earned lunch at our onsite dining destination, Herd.

An Example Itinerary
In a relaxed, small-group setting (strictly limited to four guests to ensure personal attention), you will discover exactly what goes into producing our award-winning meat.
The Todenham Philosophy:
We always start with the source. Learn why our 900-acre farm’s dedication to ethical rearing and slow-growing native breeds results in superior flavour and texture.
Tools of the Trade:
A butcher is only as good as their blade. We will guide you through the essential art of knife care, safety, and sharpening techniques to transform your prep work at home.
Practical Butchery Skills:
Under expert guidance, you will get hands-on with a range of seasonal cuts. Whether it is breaking down poultry, boning out a joint of lamb, or preparing pork, you will learn to separate cuts for different dishes and ensure nothing goes to waste.
Artisan Preparation:
Get to grips with the craft of processing meat. Depending on the season, this could involve linking your own sausages, hand-pressing burgers, or curing techniques; learning the delicate balance of seasoning and texture.
Butcher’s Secrets:
Throughout the morning, our team will demonstrate how to maximize value from larger joints, sharing professional tips on seam-butchery and selecting the perfect cuts for your cooking.
