Always great quality meat. Dry skin - essential for crackling. Score, pour over a kettle of boiling water to open the scoring. Wrap in clean tea towels and dry overnight in the fridge. Next day oil and rub in crushed fennel seeds and salt on the scoring. Place over clunky onions, carrots, celery, parsnips - whatever - and sear at top heat in the over until crackling forms. Turn to 140-50 until only just bubbling for an hour or two, maybe with a touch of water if sticking. Add half a bottle of wine - keep crackling dry - slow roast 4 hours or so until meat falls off the bone. Yummy!
